Sunshine Vegan Oatmeal Bowl

I don’t know about you, but starting my day with a healthy and fun meal definitely puts me in a better mood!

Lately, I have been loving making oatmeal for breakfast. There are so many different combinations to try.

I decided I wanted to put frozen mango on top of my oatmeal this morning. I absolutely love frozen mango. That may sound weird and you may be wondering, why not just eat regular mango? But don’t knock it until you try it. It is so good! I also love to eat it as a dessert. If you are craving something sweet, put a handful of frozen mango in a bowl or cup and microwave it for about 15 seconds. It is the perfect healthy and sweet dessert!

Anyway…. I made my oatmeal and put it all together in a random bowl. Once I finished making it, I realized I had put it in a yellow bowl. All of the yellow reminded me of the sun and sunshine, hence the name “Sunshine Vegan Oatmeal Bowl!” It is so fun and makes you feel so happy!

Sunshine Vegan Oatmeal Bowl

Ingredients:

  • 1/2 cup oats (I used Quaker 1-minute Quick Cook Oats)
  • 1 teaspoon almond butter
  • A handful of frozen mango (my favorite frozen mango is from Trader Joe’s)
  • A dash of cinnamon
  • Optional – Sprinkle some super seeds on top (I used Grain Forward Sprouted Grains and Super Seeds). You can use any super seed such as chia seeds, flax seeds, or hemp seeds.

Healthier Banana Bread

How much banana bread do you think has been made in the past few months??

I am constantly seeing pictures of banana bread on social media. 

I was hesitant to make banana bread at first, but I decided to play around with some recipes and make healthier banana bread and it is so yummy! 

I’ve been loving baking and cooking more.

A great way to make someone smile is to bake or cook something for them. Making some delicious banana bread for a friend or family member could be the perfect way to put a smile on someone’s face. I think we all could use a smile right now!

Healthier Banana Bread

Ingredients:

  • 3 ripe bananas
  • 2 eggs
  • 2/3 cup plain greek yogurt
  • 1/4 cup maple syrup 
  • 1 teaspoon vanilla extract 
  • 1 3/4 cup whole wheat pastry flour
  • 1 teaspoon baking soda 
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions:

Step one: Preheat oven to 350 degrees F.

Step two: Mash the bananas in a large mixing bowl. Add the eggs, yogurt, maple syrup, and vanilla extract to the bowl. Whisk together until well combined.

Step three: In a separate bowl, mix together the flour, baking soda, cinnamon, and salt.

Step four: Add the dry ingredients the the wet ingredients and mix together until just combined.

Step five (optional): Fold in a half cup of chocolate chips.

Step six: Line a 8 1/2 x 4 1/2 inch pan with parchment paper and grease the inside to prevent sticking (I like to spray my pan with a cooking spray).

Step seven: Pour batter into pan and bake for 50-55 minutes (test bread with a toothpick or knife – if it comes out clean it is done). Allow bread to cool in the pan for 10-15 minutes, then remove and transfer to a wire rack to finish cooling.
